Poached Rhubarb

Andrea’s recipe

Orange and cardamom poached rhubarb with honey granola and thick creamy yogurt


50 grams castor sugar
10 cardamom pods crushed
2 oranges zested & juiced
400 grams English rhubarb

Gently heat castor sugar, cardamom orange zest & juice with 2 tbs water, dissolve sugar and cook for 2-3 minutes. Add bite sized chunks of rhubarb, simmer for a couple of minutes turn gently and simmer for a little longer so it’s just soft. Take off the heat.

To make the honey granola:

300 grams of oats
100 grams honey
4tbs vegetable oil
Pinch of salt
1tsp vanilla extract
2 tbs brown sugar
2 tbs water
Mix well, bake at 180oc for approx 20 minutes

Allow to cool & serve with thick and creamy yoghurt.
